Built into the old Boerne post office on Main Street and run by the Mazour and Wolosin families, Cibolo Creek is the brewery most often mentioned first when locals are asked where to take out-of-town guests — and one of the first Hill Country breweries out-of-town buyers should put on the list. Dodging Duck has been here since 2002, which makes it the elder of Boerne's craft scene by more than a decade — and one of the longest-running Hill Country breweries still operating today. Veteran-connected and built around a spacious beer garden anchoring the south end of the Hill Country Mile, Free Roam fills a specific gap on the Hill Country breweries map — hop-forward American IPAs in a town where most flagships are lagers, kölsches, and English-style ales. No on-site kitchen; rotating food trucks (Imperfect Pies is a regular and Lupe's Mex-Tex is one of our favorite food trucks). Dog-friendly, kid-friendly, regular live music.

The H.O. Adler building is on every Boerne historic-district walking-tour map. Tusculum's beer garden took over the adjoining lumberyard courtyard, which gives the property a layout no other Boerne brewery can copy — and few Hill Country breweries match. The format is brewhouse-and-kitchen in a literal sense — gourmet burgers, sandwiches, wings, pub pizzas, plus a sister pizza concept (Carmella's) that opened next door in 2025. Fredericksburg Brewing Company has been here since 1994 in a restored 1890s Main Street building, which makes it both the oldest brewpub in Texas and the structural anchor of downtown's drinking scene — and the senior member of the Hill Country breweries roster. The kitchen runs German fare, ale burgers, pizza, and salads. Twelve themed "Bed & Brew" guest rooms upstairs let you legitimately sleep over the brewery. The founders modeled Acopon after the English brewpubs they fell in love with abroad — and the cask-and-hand-pump program is the proof. The third leg of the Dripping Springs Hill Country breweries triangle and the one that gives the cluster its actual range.

Founded by two pediatricians, sold in 2022 to a new family-ownership group that preserved the philanthropic mission, and the home of Chasing Broncos Hazy IPA — gold at the U.S. Open Beer Championship and a beer Forbes called "the world's best hazy IPA." Belgian-style ales are the house specialty (saisons, dubbels, quadrupels). Rotating food trucks, dog patio, charity events and seasonal festivals. The angle is genuinely unique nationally, not just locally.

Double Horn has been here since 2009 — the elder of the Highland Lakes scene by years. Full restaurant: flat-top burgers, salads, fish and chips with a serious local reputation, bison burger, Crabby Cado. Indoor family-friendly, dog patio, regular weekend live music. The everyday option versus Save the World's tasting-room cadence — Double Horn is where Marble Falls locals actually have lunch.

Real Ale started in the basement of a downtown Blanco antique store in 1996, sold to current ownership in 1998, relocated to the current Blanco facility in 2006, and is hitting its 30th anniversary in 2026. Vista is geographically just outside the seven-community Hill Country core — Driftwood sits in Hays County between Austin and Wimberley — but the property is unmistakably Hill Country. Le Saison farmhouse ale on Dupont yeast, an award-winning wine-barrel-aged program, an Imperial Stout aged in Texas single-malt barrels, and a full farm-to-table kitchen using local Hill Country ingredients. Pecan Street is Johnson City's anchor brewpub on the LBJ corridor — the obvious lunch or dinner stop on a Hill Country wine-trail or Pedernales Falls day trip. Full restaurant with the Black Sheep Burger, fried chicken, fish tacos, and pizza that locals will defend. Pet-friendly biergarten, dance hall + live music on weekends, catering and event space. Spring Branch is technically inside THT's four-county core — Comal County, north of Canyon Lake, off US-281 — so this is Hill Country home turf, not a border-adjacent stretch. Founded by a Navy veteran with a head brewer pulling from San Antonio and Austin brewing backgrounds. Chill Country American Lager, Devilish Critters Schwarzbier, Mutton Buster fruited sour. Currently Fri–Sat only as the property matures. Family- and dog-friendly across the six acres.

Bandera sits ~50 miles northwest of San Antonio and ~25 miles west of Boerne — genuinely Hill Country, on the western edge of THT's coverage map. Bandera Brewery operates a one-acre beer garden, with The Marfe handling food service. Rotating seasonal program from porters to IPAs. Family- and pet-friendly, regular live music. Closed Mondays.

Founded by Kim and Dennis Middleton — California transplants who brought twenty years of homebrewing with them — Middleton operates as the Wimberley-area brewery in everything but mailing address. Topaz Belgian Tripel (9% but easy-drinking), Hoppin' Wolf APA, Pepperhead Jalapeño IPA, Coffee Ale. Lineup spans seven Belgian, five American, and two British styles, which is unusually broad for a Hill Country brewpub. Los Sancho food truck on-site. Family- and dog-friendly. Closed Tuesdays.

Hye is unincorporated, fifteen miles east of Fredericksburg on US-290 — the heart of the wine corridor. White House Winery added West Wing Brewery as the beer arm of the property, with names that riff off the brand: The Federalist, The Nut Farmer, The Dubya, Rough Rider.
